Air Fryer Tofu Satay with Peanut Sauce is a tasty vegan meal! The tofu is marinated in coconut milk and curry and paired with a peanut lime sauce.

What you need

cup coconut milk

tbsp coconut aminos

tsp curry powder

tsp ground ginger

tsp garlic powder

salt & pepper

bamboo shoots

cup creamy peanut butter

cup lime juice

tbsp sesame oil

tbsp apple cider vinegar

tbsp coconut aminos

tsp ginger root

tbsp cilantro
Instructions
0 First, remove the tofu from the package and drain. Use paper towels to wrap the tofu and pat the tofu dry to drain the moisture. You could also use a tofu press. I purchased mine from Amazon. The drier the tofu, the crispier! 1 Once you dry the tofu, cut it into 4 sections and cut each of the sections in half. 3 Now, make the tofu marinade. In a mixing bowl, combine coconut milk, coconut aminos, curry powder, ground ginger, garlic powder, salt and pepper. Pour marinade over the tofu. Cover and refrigerate for 15-25 minutes, depending on the time you have. 4 Once the tofu has marinated, lay the strips in your air fryer. Ensure you do not stack the tofu on top of each other or it will not get crispy. 5 Air fry the tofu at 400 degrees F for about 20-25 minutes. 6 While the tofu is cooking, make the peanut sauce. Whisk all ingredients for the peanut sauce together in a small bowl until the sauce is creamy. 7 Once the tofu has cooked, skewer each piece of tofu. I didn't have the patience to soak the bamboo sticks before cooking the tofu, so I skewered the tofu after it was cooked. You could ditch the skewers all together, but they do make the meal more fun! 8 Serve the skewered tofu sticks with the peanut sauce and enjoy!View original recipe
